Papayas are plentiful in Hawaii and with a recent abundance from our own backyard we got creative and wanted to make something unusual.  Because it turned out so delicious, we’ve decided to share this awesome papaya soup recipe. Enjoy!

Here’s what you need:

Papaya (about 600 grams)

Quinoa (200 grams)

Smoked Chicken (200 grams)

Onion (60 grams)

Garlic Cloves (2)

Bay Leaves (2)

Chicken Stock (1 liter)

Parsley (half a bunch)

Olive Oil (100 ml)

Salt & Pepper to taste

Here’s how you prepare:

Peel the papaya and cut into small cubes, then set aside

Cut the chicken into cubes and set aside

Soak the quinoa in cold water for 2 hours

Peel and chop the onion

Clean and chop the parsley

Put it all together:

Heat up a medium saucepan and add the olive oil. Once heated a bit, add the garlic, onion, and bay leaves. Next, add the quinoa, the chicken stock, the chicken, and the papaya. Simmer until thickened, then add salt and pepper to taste.
